Instructions

1.In a large mixing bowl, add semolina flour, eggs, olive oil, and salt, and knead the dough to form a smooth ball.
2.Divide the dough into small portions and roll each one into a thin sheet using a pasta machine or a rolling pin.
3.Place a tablespoon of ricotta cheese and chopped walnuts onto each sheet of pasta.
4.Cut radicchio into small pieces and add onto the pasta sheets.
5.Wet the edges of the pasta sheets with water, place another sheet on top, and press firmly around the filling to seal.
6.Cut the ravioli into desired shapes and cook in salted boiling water for 3-4 minutes.
7.In a skillet, heat up oil, add garlic and cook for 1 minute. Add red wine, bring to boil and simmer for 2-3 minutes.
8.Serve the ravioli hot, drizzled with the red wine sauce and garnished with chopped walnuts.
