Ingredients

4 lamb racks
3/4 cup hazelnuts
1/3 cup butter
1 pinch hot pepper flakes
1/4 cup Dijon mustard
1 teaspoon coarse salt

Instructions

1.Preheat oven to 450°F.
2.Coarsely chop hazelnuts and blend butter, hot pepper flakes, mustard and salt with hazelnuts in a small bowl.
3.Season lamb with salt and black pepper.
4.Heat a large ovenproof skillet over high heat and add 2 tablespoons of oil to the skillet.
5.Sear the racks of lamb until brown all over, about 6 minutes.
6.Transfer skillet to the oven and roast lamb for about 14 minutes, or until a meat thermometer inserted into the center of the rack registers 125°F for medium-rare.
7.Remove from oven and let lamb rest for 10 minutes.
8.Brush with hazelnut butter paste before carving and serving.
