Ingredients

40 ml fish sauce
2 garlic cloves , crushed
60 ml sweet chili sauce
3 tablespoons of fresh mint , chopped
20 ml peanut oil
6 frenched lamb racks , 4 cutlets on each
2 tablespoons palm sugar , grated
40 ml peanut oil
60 ml rice vinegar
1 lime , juice and zest of
20 ml fish sauce
2 small red chilies , seeded , thinly sliced
2 spring onions , sliced on diagonal
2 cups of fresh mint , roughly chopped

Instructions

1.Preheat oven to 200°C.
2.Combine 40 ml of fish sauce, the garlic, chili sauce and 3 tbsp. of chopped mint in a bowl. Mix it well to become a paste.
3.Heat peanut oil in a frying pan and add the lamb racks for 3 minutes until it turned golden brown.
4.Brush the lamb racks with chili sauce paste and transfer them to baking tray and wrap them loosely with foil.
5.Bake it for 20 minutes, remove foil and brush with glaze.
6.Bake it for 10 minutes until the glaze is golden brown.
7.Transfer the lamb racks to a plate and let it rest for 5 minutes.
8.Whisk together palm sugar, 40ml peanut oil, rice vinegar, lime zest and juice, and 20ml fish sauce in a bowl. Add sliced chilies, sliced spring onions, and 2 cups roughly chopped mint leaves. Mix it flipping them well.
9.Place the lamb rack on a serving plate. Drizzle with the sauce and serve.
