Ingredients

800 g floury potatoes ( such as King Edwards or Maris Piper )
100 g melted butter
400 g white onions , sliced
2 racks of lamb , each with 6 bones
1 sprig rosemary

Instructions

1.1.Preheat the oven to 160ºC and boil the potatoes in salted water until tender.
2.Peel and mash the potatoes while they're still hot, adding in the melted butter. Season with salt and pepper to taste.
3.Set aside the mashed potatoes and begin caramelizing the sliced onions in a pan with some olive oil. Add salt and pepper for flavor, stirring occasionally until they're soft and golden brown in color.
4.Spoon the mashed potatoes into a greased baking tray and flatten them to form a cake. Bake the cake in the oven for 20-25 minutes or until it turns light golden brown.
5.In the meantime, season the lamb racks with salt and pepper, and brown them in a pan over high heat. Remember to sear them on all sides for a nice crust, and add a sprig of rosemary as well.
6.Once the onion cake is ready, place the lamb racks on top of the potato cake, and roast them for 15 to 20 minutes or until they reach the desired level of doneness. Leave the meat to rest for 5 minutes before serving warm.
