1 rack of cervena venison , trimmed
1 teaspoon finely chopped thyme
1 teaspoon finely chopped parsley
1/2 teaspoon finely chopped sage
1/2 teaspoon finely chopped rosemary
1/2 teaspoon finely chopped tarragon
1 tablespoon whole grain mustard
2 teaspoons cracked black peppercorns
4 garlic cloves , crushed
salt and pepper
4 tablespoons butter
3 cups total mixture of varietal mushrooms ( morel , shiitake , champignons porcini )

Instructions

1.Preheat the oven to 200C/ 180C fan/ gas 6.
2.Rub the venison with the thyme, parsley, sage, rosemary, tarragon, mustard, salt, and black peppercorns, and garlic cloves.
3.Melt the butter in an oven-safe pan, then add the mushrooms and cook until they turn golden brown.
4.Remove the mushrooms from the heat and spread them over the top of the venison rack.
5.Bake in the preheated oven for 15 to 20 minutes, or until it reaches the desired level of doneness (use a meat thermometer to check if it's cooked to your liking).
6.Once the venison is cooked to your liking, remove it from the pan and rest for 5-10 minutes. Then slice and serve.
