8 1/2 cups skim milk , divided
2 cups uncooked white rice
2 cinnamon sticks
2 1/2 cups light coconut milk
1 1/4 cups white sugar
1 tablespoon pure vanilla extract

Instructions

1.In a blender, combine 4 cups of the skim milk, uncooked white rice, and cinnamon sticks. Blend well until the rice is very fine.
2.Pour the mixture into a large bowl and add the remaining 4 1/2 cups of skim milk, coconut milk, white sugar, and vanilla extract. Stir well until the sugar is dissolved.
3.Cover the bowl and refrigerate the mixture for at least 2 hours or overnight.
4.Strain the mixture through a fine mesh sieve or cheesecloth to remove any rice or cinnamon bits.
5.Serve the horchata over ice and enjoy!
