1 cup Baby Spinach
6 ounces crumbled feta cheese or 6 slices provolone cheese
1 tablespoon extra virgin olive oil

Instructions

1.Preheat the oven to 400°F.

6.Pinch the seam and the ends to seal.
7.Heat the olive oil in a large oven-proof skillet over medium-high heat. Brown the meatloaf on all sides, about 10 minutes total.
8.Transfer the skillet to the oven. Bake for 25-30 minutes or until the internal temperature of the meatloaf reaches 160°F.
9.Remove from the oven and let rest for 10 minutes before slicing and serving.
