Croque Madame is a French dish of toasted ham and cheese sandwich topped with a fried egg and is an ideal addition to your breakfast menu. The Deviled Ham Croque Madame recipe by Rachael Ray is an excellent variation on the traditional dish because it incorporates asparagus for extra nutrients and flavor. The creamy béchamel sauce in this recipe is the perfect complement to the croque madame. It makes for a creamy and cheesy meal. Moreover, it provides just the right amount of spice and kick to the delicious ham croque madame. The soft and savory egg yolks tie everything together to make a sumptuous and hearty breakfast.

Instructions

1.In a food processor, combine the chopped ham, Dijon mustard, Tabasco, sweet paprika, parsley, grated onion, and black pepper. Pulse until a paste forms.
2.Melt 1/2 tablespoon of butter in a small saucepan. Stir in the flour and whisk for a few minutes. Add the whole milk and whisk again. Add salt, pepper, and freshly grated nutmeg. Cook the mixture over medium heat until it thickens to a gravy-like consistency.
3.Preheat the oven to 400°F. Toast the bread; place four slices in a casserole dish. Layer each slice of bread with three cooked asparagus spears, smother in as much of the ham paste as you dare, and top with grated cheese.
4.Toast the cheesy asparagus-topped bread until bubbly and gooey.
5.Melt the remaining butter in a nonstick skillet over medium heat. Add four eggs, one at a time, and cook until the whites are set and yolks remain runny.
6.Place an egg atop each cheesy-sauced hammy toast and serve.
