4 ears corn on the cob with husks
2 cans no-salt-added black beans , drained and rinsed
6 Roma ( plum ) tomatoes , chopped
1 green bell pepper , chopped
1 red onion , diced
2 jalapeno peppers , chopped
1 lime , juiced
2 teaspoons chopped fresh cilantro
2 cloves garlic , minced
1 can tomato juice
1 can tomato sauce
1 pinch kosher salt , or to taste
1 pinch ground black pepper , or to taste

Instructions

1.Soak corn in water for 20 minutes to prevent husks from igniting while grilling.
2.Heat grill to medium-high heat.
3.Grill corn, turning frequently, until husks are charred and corn kernels are tender and lightly charred for about 20 minutes.
4.Cool corn until easy to handle then cut kernels from cobs.
5.Place corn kernels, black beans, tomatoes, green bell pepper, red onion, jalapeno peppers, lime juice, cilantro, garlic, tomato juice, and tomato sauce in a large bowl.
6.Mix well.
7.Season with salt and black pepper to taste.
8.Chill in the refrigerator for 30 minutes before serving.
