Ingredients

3 lbs shrimp , peeled and deveined
2 cans Rotel Tomatoes
1 large onion , chopped
2 teaspoons oil
5 cups rice
1 cup coriander , finely chopped
1 package fish biryani spice mix ( I use Shan brand )

Instructions

1.Rinse the rice in water until the water runs clear and then soak the rice in water for 30 minutes.
2.In a large skillet, sauté onion in oil until lightly browned.
3.Add the fish biryani spice mix and stir for 1 minute. Add the shrimp and cook until pink.
4.Add the Rotel tomatoes and cook for 5 minutes.
5.In a separate pot, bring 7 cups of water to a boil. Drain the water from the rice and add it to the pot and cook until tender.
6.Mix the shrimp mixture and rice together and garnish with coriander. Serve hot.
