Ingredients

225 g prunes , pitted
3 tablespoons flour
1 rabbit
2 tablespoons butter
2 tablespoons oil
100 g bacon , cubed
2 onions , coarsely chopped
360 ml beer , Rodenbach
1 tablespoon cider vinegar
2 garlic cloves , finely chopped
4 sprigs thyme
2 bay leaves
1 clove

Instructions

1.Place the prunes in a bowl with enough water to just cover them. Set aside.
2.Cut the rabbit into serving pieces, removing any excess fat or skin.
3.In a bowl, combine the flour, salt, and pepper. Dredge the rabbit pieces in the mixture to coat.
4.In a Dutch oven or heavy pot, heat the butter and oil over medium-high heat until the butter is melted and foamy. Add the rabbit pieces and bacon and cook until the rabbit is browned on all sides, about 6-8 minutes.
5.Add the onions and cook until they are softened and lightly browned, about 5 minutes.
6.Pour in the beer and vinegar, scraping up any browned bits from the bottom of the pot with a wooden spoon. Add the garlic, thyme, bay leaves, clove, and prunes with their soaking liquid. Bring to a simmer.
7.Cover the pot and reduce the heat to low. Cook, stirring occasionally, until the rabbit is tender and the stew has thickened, about 2 hours.
8.Adjust seasoning to taste with salt and pepper.
