Ingredients

1 cup quinoa
2 cups water
1/4 cup fresh lime juice
1 tablespoon fresh lime juice
1/3 cup cilantro , loosely packed
1 tablespoon Thai fish sauce
6 garlic cloves
2 -3 small Thai red chili peppers or 2 -3 small serrano chilies
1 tablespoon raw sugar or 1 teaspoon honey
1/4 cup olive oil
3 scallions , sliced diagonally

Instructions

1.Rinse quinoa in a fine-mesh sieve under running water.
2.In a saucepan, bring water to a boil and add in the quinoa and salt.
3.Reduce the heat to medium-low and cover with a tight-fitting lid. Cook for about 15-20 minutes or until quinoa is fluffy and the water is absorbed completely.
4.In a blender, add lime juice, cilantro, fish sauce, garlic, chili peppers, sugar, and olive oil. Blend until smooth.
5.Once cooked, transfer the quinoa into a large bowl and let it cool down.
6.Add the scallions and the Thai dressing. Mix well.
7.Serve immediately or chill in the fridge for up to 24 hours.
