Ingredients

4 poblano peppers , roasted , seeds removed and sliced in half
1 tablespoon olive oil
1 large celery ( almost one cup sliced )
1 large shallot , 1/2 cup diced
3 mushrooms , 1 cup diced
3 garlic cloves , minced
1 cup diced tomato
1 teaspoon dried oregano
1 teaspoon dried parsley
1/2 teaspoon smoked paprika
salt and pepper
1 cup cooked quinoa
3 ounces Cotija cheese , crumbled
1 cup corn
1/2 - 1 cup black beans ( optional )
1 tablespoon fresh cilantro , chopped
1/2 cup shredded cheddar cheese

The roasted poblanos are filled with a mixture of sauteed vegetables, quinoa, Cotija cheese, and fresh cilantro, and are topped with melted cheddar cheese. Instructions

1.Begin by roasting the poblano peppers in the oven or on a gas stove until the skin is charred and blistered.
2.Once the peppers are roasted, remove the skin and seeds and slice them in half.
3.In a large pan over medium heat, saute the celery, shallot and mushrooms in olive oil until softened, about 5 minutes.
4.Next add garlic, diced tomatoes, oregano, parsley, smoked paprika, salt and pepper and cook for an additional 2-3 minutes.
5.Add cooked quinoa, Cotija cheese, corn, black beans (if using) and fresh cilantro and mix well.
6.Stuff each poblano half with the quinoa mixture and top them with shredded cheddar cheese.
7.Place the stuffed poblanos onto a baking sheet and bake in a 350 degree F oven for 15-20 minutes or until the cheese is melted and bubbly.
