Ingredients

1 cup uncooked quinoa
2 cups water
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 avocado, chopped
1 grapefruit, peeled and segmented
3 green onions, chopped
1/4 cup chopped fresh cilantro
3 tbsp olive oil
2 tbsp white wine vinegar
1 tsp honey
Salt and pepper to taste

Instructions

1.Rinse quinoa in a fine-mesh sieve and drain well.
2.In a saucepan, bring water to a boil then add quinoa.
3.Reduce heat to low, cover, and simmer for about 15-20 minutes or until tender.
4.Remove from heat and let cool.
5.In a large bowl, combine cooked quinoa, bell peppers, avocado, grapefruit, green onions, and cilantro.
6.In a small bowl, whisk together olive oil, white wine vinegar, honey, salt, and pepper.
7.Drizzle the dressing over the salad and toss to coat.
8.Serve at room temperature or chilled.
