These Quinoa Flax English Muffins are a tasty and healthy alternative to traditional English muffins. They are made with a blend of nutrient-dense quinoa, fiber-rich flax seeds, and a few other ingredients that create a high-protein, gluten-free, and low-carb muffin. They are perfect for a quick breakfast or as a snack, topped with your favorite spreads or used as a base for sandwiches. The muffins are slightly chewier than traditional English muffins but have a delicious whole-grain and nutty flavor that pairs well with various toppings.

Instructions

1.Rinse the quinoa in a fine mesh strainer and place it into a saucepan with 1 cup of water. Bring the water to a boil, reduce the heat to low, cover with a lid, and simmer for 18-20 minutes until the water is absorbed. Remove from heat and let it sit for 5-10 minutes.
2.In a mixing bowl, whisk together the egg, ground flax seeds, cayenne, Dijon mustard, and coconut oil. Add the cooked quinoa to the bowl and mix until fully combined.
3.Using a tablespoon, portion the mixture out onto a non-stick skillet or a griddle to form 4-inch patties. Cook over medium-low heat for 5-7 minutes on each side, until both sides are golden brown and crispy.
4.Once done, let the muffins cool for 5-10 minutes before slicing them in half.
