Ingredients

1 cup quinoa
1 1/4 cups almond meal
3/4 cup blended gluten-free self-raising flour or 3/4 cup self-raising flour
1 teaspoon ground cinnamon
3/4 cup craisins
1 teaspoon finely grated orange rind
3 eggs
1/2 cup honey
1/3 cup vegetable oil
1 teaspoon vanilla extract

These squares are easy to make and perfect for a midday snack, they can also be enjoyed as a dessert.

Instructions

1.Preheat oven to 180°C/350°F and line a 20x20cm square cake tin with baking paper.
2.Rinse 1 cup of quinoa and place in a medium saucepan with 1.5 cups of water. Bring to a boil then reduce heat and simmer for 10 minutes or until fully cooked.
3.In a large bowl, combine the cooked quinoa, almond meal, flour, ground cinnamon, craisins, and orange rind.
4.In another bowl, whisk together the eggs, honey, vegetable oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix well.
5.Pour the mixture into the cake tin and bake for 25-30 minutes or until golden on top.
6.Let cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
