Ingredients

6 medium quinces
2 tablespoons lemon juice , fresh
1 pomegranate
2 1/2 cups sugar
3 1 bay leaves ( basil is used if making with quince alone ) or 3 basil leaves ( basil is used if making with quince alone )
Quince fruit is not as commonly used as other fruits, but it has been around for centuries and is known for its health benefits, especially in the Middle East and Mediterranean regions. This Spoon Sweet recipe combines the essence of quince and pomegranate, creating a sweet and tangy flavor that is perfect for breakfast, snacks, and desserts. It's a great topping for Greek yogurt, and it can be used to sweeten pastries, especially fat-free cakes.

Instructions

1.Wash quinces well and cut them into small, bite-sized pieces, throwing away seeds and stems.
2.In a large pot, mix quince pieces with sugar and lemon juice and let it rest for an hour (mix occasionally).
3.Turn stove on medium-high heat and bring the quince mixture to a boil.
4.Lower the heat and let it simmer for 15-20 minutes, stirring occasionally.
5.Cut the pomegranate in half, and using a spoon tap the back of one of the halves to let the seeds fall into the quince mixture, discard the white membranes.
6.Add bay/basil leaves and cook for another 30-45 minutes until the mixture thickens, stirring occasionally.
7.To test if ready, drop a bit of the spoon sweet on a plate and wait until it cools and solidifies. If it sticks together as a jelly, it's ready.
8.Turn off the heat and let the spoon sweet cool down for 5-10 minutes.
9.Remove basil/bay leaves, and with a ladle, transfer the spoon sweet into sterilized jars. Keep in the fridge for up to 6 months.
