375 g plain flour

175 g carrots , grated
250 g potatoes , diced
175 g onions , chopped

Instructions

1.Preheat the oven to 200°C/180°C fan/gas mark 6.
2.In a large bowl, mix together the flour, butter and grated Danish blue cheese until it resembles fine breadcrumbs. Add water and mix until you have a firm, smooth dough.
3.Mix together the grated carrots, chopped onions, diced potatoes, grated Danish blue cheese, dried herbs and vegetable stock in a large bowl.
4.Divide the dough into six equal portions and roll out each portion into a 20cm circle.
5.Put a portion of the mixed vegetables in the centre of each circle and then fold over the dough to enclose the filling.
6.Crimp the edges of each pasty together to create a seal. Cut a small slit in the top to allow steam to escape during cooking.
7.Place the pasties on a baking sheet lined with baking paper and bake in the preheated oven for 25 to 30 minutes, or until golden brown.
