1 small zucchini ( diced into chunks )
1 whole tomato ( sliced then halved )
1/2 large purple onion , sliced 1/4 inch thick ( then halved or to your liking )
1 carrot , diced
1 red pepper ( this may be omitted if preferred )
2 tablespoons olive oil
1 teaspoon garlic powder
1 tablespoon italian seasoning

Instructions

4.Add the sliced red pepper and zucchini. Sauté for another two minutes.
5.Add the pre-cooked brown rice and halved tomato to the skillet. Stir in the Italian seasoning and sauté for another two minutes.
