Ingredients

1/2 cup sunflower oil
150 g chocolate , chopped
2 eggs
1 cup self raising flour
1/2 cup caster sugar
3/4 cup pecans , halved
1 teaspoon vanilla essence

Instructions

1.Preheat the oven to 180C/350F/Gas 4 and line a 20cm x 20cm/8in x 8in square cake tin with baking parchment.
2.Heat the oil and chocolate together in a saucepan over a low heat until melted.
3.Whisk the eggs and sugar together in a bowl until pale and thick.
4.Fold the chocolate mixture into the egg mixture.
5.Sift the flour over the chocolate mixture and fold through until smooth.
6.Fold in the pecans and vanilla essence.
7.Pour the mixture into the prepared tin and bake for 25-30 minutes until a skewer inserted into the centre comes out with a few crumbs attached.
8.Leave to cool completely in the tin before cutting into squares and serving.
