Tamales are a traditional Mexican dish made by filling a masa dough with various ingredients and steaming the mixture until cooked through. While tamales can be quite time-consuming to make from scratch, this easy Chicken-and-Cheese Tamale recipe uses masa harina and a rotisserie chicken for a quick and flavorful meal. These tamales are filled with shredded chicken and sharp cheddar cheese, and can be served as a main course or a snack. They are also a great way to use up leftover chicken or cheese from other recipes.

Instructions

.In a large bowl, mix together masa harina, baking powder, and salt.
.Add cool water and stir until the dough comes together. If the dough is too dry, add more water, 1 tablespoon at a time.
.Using an electric mixer, beat vegetable shortening until light and fluffy.
.Add chicken stock to the shortening and mix until well combined.
.Add the chicken, cheese, cilantro, and scallions to the shortening mixture and stir until well combined.
.Roll the dough into balls about 2 inches in diameter.
.Flatten each ball into a disk about 1/4 inch thick.
.Spoon a tablespoon of the chicken mixture into the center of each disk.
.Fold the dough over the filling to create a pocket and press the edges together to seal.
.Place the tamales in a steamer basket over boiling water.
.Cover and steam for 25-30 minutes, or until the tamales are cooked through.
.Serve hot with hot sauce on the side.
