Ingredients

1/2 cup split red gram
1 large potato , peeled and cubed ( must )
1 medium tomatoes , peeled and quartered ( must )
1 eggplant , decrowned and cubed ( optional )
3 onions , peeled and cubed ( must )
1 cup cubed bottlegourd , skin peeled ( optional )
4 green chilies
6 pieces vegetable drumsticks , halved ( optional )
4 cups water
1/2 teaspoon turmeric powder
salt
1/2 teaspoon asafoetida powder
1 tablespoon red chili powder , to taste
1 1/2 tablespoons coriander powder
1/4 cup tamarind pulp
1 teaspoon mustard seeds
1 1/2 tablespoons oil
4 curry leaves
3 red chili peppers
chopped cilantro , for garnishing

Instructions

1.In a large pot, bring the water to a boil. Add the split red gram, potato, tomato, eggplant, onion, bottlegourd, and green chilies.
2.Add the turmeric powder, salt, asafoetida powder, red chili powder, and coriander powder to the pot and mix well.
3.Cook for 15-20 minutes on medium heat or until the lentils and vegetables are soft.
4.Add the tamarind pulp and mix well. Cook for another 5-7 minutes on low heat.
5.In a small pan, heat the oil and add the mustard seeds, curry leaves, and red chili peppers. Cook for 1-2 minutes or until the mustard seeds start to pop.
6.Add the tempered oil to the sambhar and mix well.
7.Serve hot with chopped cilantro on top.
