Ingredients

1 lb bulk Italian sausage
48 ounces pasta sauce , any flavor
6 cups cooked mafalda noodles ( mini lasagna noodles )
6 ounces mushrooms
15 ounces ricotta cheese
1/2 cup parmesan cheese
1 tablespoon chopped fresh oregano
2 cups shredded mozzarella cheese
This Quick and Easy Mini-Lasagna is a perfect weekday meal when you're short on time and looking for something quick to prepare. The mini lasagna noodles (mafalda) make it even easier, and the individual portions are perfect for serving. Instructions

1.Preheat oven to 375°F (190°C).
2.In a large skillet, cook sausage until browned; drain. Add mushrooms and cook until tender. Stir in pasta sauce.
3.In a medium bowl, combine ricotta cheese, parmesan cheese, and oregano.
4.In a 13x9 inch baking dish, spread 1 cup of the meat sauce. Place noodles on top of the sauce, trimming as needed. Spread half of the ricotta mixture over the noodles. Top with 1 cup of meat sauce and 1/2 cup of mozzarella cheese. Repeat layers.
5.Cover with foil and bake for 25 minutes. Remove foil and sprinkle with remaining mozzarella cheese. Bake for an additional 25 minutes or until bubbly and cheese is melted.
