Ingredients

2 cups hot tap water
1 cup cold orange juice
1 1/2 tablespoons granulated yeast
1 1/2 tablespoons kosher salt
1/2 cup honey ( recommend NuNaturals MoreFiber Stevia Baking Blend ) or 1/4 cup stevia ( recommend NuNaturals MoreFiber Stevia Baking Blend )
1/2 teaspoon ground aniseed
1 teaspoon ground cardamom
1 1/2 teaspoons orange zest
1 cup rye flour
5 1/2 cups unbleached all-purpose flour
cornstarch , wash ( blend 1/2 teaspoon cornstarch with a small amount of water using a fork , add 1/2 cup water and micro )
1/4 teaspoon ground aniseed
1/4 teaspoon ground cardamom
1 1/2 teaspoons brown sugar

Instructions

1.In a large mixing bowl, add hot tap water, cold orange juice, granulated yeast and kosher salt. Mix well to combine.
2.Add honey, ground aniseed, ground cardamom and orange zest. Mix well.
3.Add rye flour and unbleached all-purpose flour one cup at a time, mixing well after each addition.
4.Transfer dough to a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
5.Place dough in a greased bowl, cover with a damp cloth and let it rise for 1-2 hours.
6.Preheat oven to 375°F. Grease a baking sheet with cooking spray.
7.Transfer dough to the greased baking sheet, brush with cornstarch wash and evenly sprinkle with the remaining aniseed, cardamom and brown sugar.
8.Bake for 25-30 minutes or until golden brown. Remove from oven and let cool for 10-15 minutes before slicing.
