Quiche Lorraine is a classic French dish that originated in the Lorraine region. It is a savory custard made with eggs, milk, cheese, and meat (usually bacon or ham). This recipe puts a spin on the classic by using crepes instead of a traditional pie crust, and making them into individual cups. These cups can be customized with different fillings to suit your taste, and are perfect for meal prepping or entertaining guests. They are also quite easy to make, even for beginner cooks.

Instructions

1.Preheat the oven to 375 degrees F.
2.In a bowl, mix together the crumbled bacon and grated swiss cheese.
3.In another bowl, whisk together the flour and salt.
4.Beat in the eggs. Gradually add the milk and mix well.
5.Add the bacon and cheese mixture to the egg mixture and stir well.
6.Grease a standard muffin tin with cooking spray. Place crepes into cups, pressing gently to fit snugly into the cups. Spoon the bacon and cheese mixture into each cup, filling about 2/3 full.
7.Bake for 20-25 minutes, until the cups are set and golden brown. Allow to cool for a few minutes before removing from the muffin tin.
