Ingredients

1 lb hamburger meat
2 cups chopped onions , divided
1 bunch green onion
3 cloves chopped garlic
picante sauce , to taste , i use pace
salt and pepper
1 cup of grated cheddar cheese
8 corn tortillas
1 lb soft melt cheese , i use velveeta
picante sauce , to taste
Queso Beef Enchiladas is a traditional Mexican dish that consists of rolled tortillas stuffed with seasoned hamburger meat, onions and cheese, and baked in a zesty picante sauce. This delicious dish is perfect for lunch or dinner, and is often served with refried beans, rice and a fresh salad. Instructions

1.Preheat the oven to 350°F.
2.Cook the hamburger meat in a skillet over medium-high heat until it's no longer pink. Drain any excess grease.
3.Add half of the chopped onions, green onion, garlic and picante sauce to the skillet with the hamburger meat, stirring well to combine. Season with salt and pepper as desired.
4.In a separate skillet or on an open flame, warm each tortilla until it's slightly charred and pliable.
5.Spread a spoonful of the hamburger mixture onto each tortilla, reserving some for the topping. Add some shredded cheddar cheese on top of the burger mixture.
6.Roll each tortilla tightly, then place it in a baking dish.
7.Melt the soft cheese in a saucepan over medium heat, adding in the remaining picante sauce and onions as well. Stir constantly until the cheese mixture is smooth.
8.Pour the melted cheese mixture over the rolled enchiladas and sprinkle the remaining burger mixture on top.
9.Bake for 25 minutes, or until the cheese is bubbly and golden.
