1/4 lb fresh mozzarella cheese , cut into 1/2-inch cubes ( at room temperature )
4 tablespoons unsalted butter , cut into pats
1 3/4 cups sugar
1 teaspoon ground cinnamon
4 large egg yolks
1/2 cup un-sifted all-purpose flour

Instructions

1.Preheat oven to 350 degrees Fahrenheit.
2.In a large bowl, whisk together flour and salt. Add vegetable shortening and use your fingers to mix until the mixture resembles coarse sand.
3.Gradually add in ice water, a few tablespoons at a time, until the dough comes together in a ball.
4.Knead the dough on a floured surface until smooth, about 3-4 minutes.
5.Divide the dough into 12 equal portions and roll each one into a ball.
6.Grease a muffin tin with cooking spray and press each ball into a muffin cup, making sure to bring the dough up the sides of the cups.
7.In a separate bowl, toss mozzarella cheese and butter with 1 1/2 cups sugar and cinnamon.
8.Beat egg yolks in a small bowl and add to cheese mixture, stirring until well combined.
9.Add un-sifted flour and stir until just combined.
10.Scoop the cheese mixture into the pastry cups.
11.Bake for 25-30 minutes or until the pastry is golden brown and the filling is set.
12.Cool tarts completely in the muffin tin. Run a knife around the edges before removing the tarts.
13.Serve tarts dusted with remaining 1/4 cup of sugar.
