Instructions

1.Preheat oven to 325°F (160°C).
2.Cut bread into small cubes and place it in a large bowl. Add currants, apples, and dried thyme to the bowl.
3.Melt butter in a saucepan and pour it over the bread mixture. Mix well.
4.Heat oil in a frying pan. Add chopped onion, carrot, celery, and garlic to the pan. Cook until vegetables are tender.
5.Add bay leaf, whole cloves, fresh thyme, fresh marjoram, and white wine to the pan. Simmer for a few minutes.
6.Add tomato paste and chicken bouillon. Stir until combined.
7.Pour the vegetable mixture over the bread mixture, tossing until well combined.
8.Stuff the goose with the bread mixture. Close the opening of the goose with a skewer and tie the legs together with kitchen twine.
9.Place the goose in a roasting pan and roast for about 3 to 4 hours until the internal temperature of the meat reaches 165°F (74°C).
