Ingredients

1 quart water
8 small hard-shelled clams , washed and scrubbed
2 tablespoons olive oil
1/2 cup finely chopped onion
1 teaspoon finely chopped garlic
1 small bay leaf
1 large tomatoes , peeled seeded and finely chopped
1/4 cup chopped lean smoked ham
2 tablespoons chopped parsley
1/4 cup raw rice
1/4 cup white wine
1/8 teaspoon saffron
1/2 teaspoon fresh lemon juice
8 medium shelled shrimp , cut into 1/2 inch pieces
1 hard-cooked egg , finely chopped

Instructions

1.In a medium pot, bring water to a boil.
2.Add clams, cover and cook 4 minutes or until clams open.
3.Remove clams, let cool and chop finely.
4.In a medium pan, heat olive oil over medium heat and add onions and garlic. Cook until onions are soft and translucent.
5.Add bay leaf, tomato, ham and parsley, and cook for an additional 2 minutes.
6.Add rice, white wine, saffron and lemon juice, and cook stirring frequently, for 15 minutes.
7.Add shrimp and clams and cook for 2 more minutes.
8.Remove from heat and serve garnished with the chopped hard-cooked egg.
