Ingredients

4 4 tablespoons wine vinegar or 5 tablespoons fresh lemon juice
2 quarts whole milk

Instructions

1.In a large pot, bring the milk to a boil over medium-high heat.
2.Remove from heat and stir in vinegar or lemon juice.
3.Let it sit for 5-10 minutes until mixture curdles.
4.Line a strainer with cheesecloth and pour the mixture into it.
5.Let it drain for 30-45 minutes.
6.Transfer to a bowl, add salt to taste and mix well.
