Ingredients

1 1/2 cups pomegranate seeds
1/2 cup pomegranate juice

1/2 cup Marsala wine , or as needed
1/4 cup chopped fresh mint
2 tablespoons grated orange zest
12 quail , dressed
salt and freshly ground black pepper to taste
12 slices pancetta ( Italian unsmoked cured bacon )
1/4 cup olive oil
1 cup chicken stock
2 oranges , sectioned
1/2 cup pomegranate seeds , for garnish

Instructions

1.In a medium bowl, mix pomegranate seeds, pomegranate juice, orange juice, Marsala wine, mint, and orange zest. Set aside.
2.Season quail with salt and black pepper. Place 1 pancetta slice over each bird, securing it with a toothpick.
3.Heat olive oil in a large skillet over medium heat. Cook quail, pancetta side down, until pancetta is brown and crispy, about 5 minutes. Turn and cook the other side for about 2-3 minutes.
4.Remove quail from the skillet and add chicken stock. Bring to a boil, scraping any brown bits from the bottom of the skillet with a wooden spoon. Cook and stir until stock is reduced by about half.
5.Add the pomegranate mixture and orange sections to the skillet. Bring to a boil and cook, stirring occasionally, until the sauce is reduced and thickened, about 10 minutes.
6.Return the quail to the skillet, turning to coat with the sauce, and cook for another 5 minutes until the quail is fully cooked.
7.Serve quail topped with sauce and garnished with pomegranate seeds.
