Ingredients

4 ounces suet ( shortening may be substituted )
2 ounces stoned raisins
3 eggs
3 ounces lemon marmalade
1 ounce cornflour or 1 ounce rice flour
1 lemon , zest of
3 ounces demerara sugar
4 ounces breadcrumbs
1 pinch salt
1/4 cup orange juice
1/2 cup sugar
2 tablespoons lemon juice
1 cup boiling water
1/2 cup madeira wine
2 egg whites
Pwdin Eryri, also known as Snowdonia Pudding, is a traditional Welsh dessert that originates from the Snowdonia region of North Wales. This sweet and savory pudding is made with a mixture of suet, raisins, lemon marmalade, and breadcrumbs, flavored with lemon zest. It is rich, spicy and served with a iced Madeira sauce, which is a blend of sugar, lemon, orange juice, and Madeira wine. Instructions

1.Preheat the oven to 325°F.
2.Mix together the suet, breadcrumbs, raisins, sugar, flour, and salt in a large bowl.
3.Beat the eggs and marmalade together in a separate bowl and mix in the lemon zest. Add this to the suet mixture and stir well.
4.Grease a 1 1/2 quart pudding mold and pour the mixture in. Cover with foil And tie a string around it to keep it tight.
5.Place the mold into a large pot and pour boiling water up as high as you can without it getting into the pudding mixture. Cover it with a tight lid and let it steam for 2 1/2 hours, making sure the water doesn’t evaporate completely.
6.When it’s done, remove it from the pot and let it cool before removing it from the mold.
7.For the madeira sauce, dissolve the sugar in the lemon and orange juice, add the Madeira, and pour the mixture into a shallow container. Freeze until it is almost set, then beat it until it is light and fluffy. In a separate bowl, whisk the egg whites until they form soft peaks. Fold the egg whites into the Madeira mixture and freeze again until hard.
