Purple Yam Two-Tone Bread is a unique bread recipe that is popular in Japan, Taiwan and many other countries. Instructions

1.In a small saucepan, mix the bread flour and water together.
2.Cook over medium heat, constantly stirring for about 2-3 minutes until it becomes a thick paste.
3.Remove from heat, cover and let it cool to room temperature.
4.In a medium bowl, mix together bread flour, purple yam powder, sugar, salt, instant dry yeast, tangzhong water roux and warm milk together. Add the egg and butter, and continue to knead until the dough becomes elastic.
5.Divide the dough in half with one half having more than the other, mix each half to form two different colors.
6.Roll each color out into rectangles and stack on top of each other.
7.Roll up the bread tightly and place it into a loaf pan.
8.Cover with a damp cloth and set aside for 1 hour to rise.
9.Preheat the oven to 350 degrees F and bake for 35-40 minutes.
10.Remove from oven and let cool for 5 minutes before slicing.
