2 cups sweet rice ( Sho Chiku Bai )
2 tablespoons pirurutong rice ( dark purple rice )
2 cups water
1/2 cup sugar
1 1/2 cups shredded coconut
1 teaspoon coconut extract

Instructions

1.Rinse the sweet rice and pirurutong rice together until the water runs clear.

4.While the rice is cooking, mix the shredded coconut, sugar, and coconut extract together in a bowl.

7.Measure out about 2 tablespoons of rice and form it into a ball.
8.Flatten the rice ball and place a small spoonful of the coconut mixture in the middle.
9.Fold the rice around the filling and gently roll the ball to smooth it out.
10.Repeat until all the rice and filling is used up.
