6 tablespoons extra virgin olive oil
1 to 2 lemon , juice of
255 g creme fraiche
500 g baby new potatoes
500 g purple potatoes
sea salt
fresh ground black pepper
1 bunch radish , finely sliced
1/2 cup mint leaf , chopped
1/2 cup chives , chopped

Instructions

1.Preheat the oven to 200°C (180°C fan-forced).
2.Wash and slice the potatoes into halves.
3.In a large bowl, mix potatoes with six tablespoons of olive oil, lemon juice, salt, and pepper.
4.Bake for about 25 to 30 minutes until golden brown.
5.Let the potatoes cool down.
6.Mix cooked potatoes, radish, chopped chives, and chopped mint leaves in a large bowl.
7.Add in creme fraiche and mix well.
8.Season with salt and pepper as needed.
