Ingredients

3 lbs unshucked fava beans
boiling water
ice
tap water
3 lbs yukon gold potatoes
1 large fennel bulb
1 cup half-and-half
1/2 cup butter
kosher salt
fresh ground black pepper , to taste

Instructions

1.First, shell the fava beans and blanch them in boiling water for 2-3 minutes, then drain and shock into ice water to cool. Peel the beans and set them aside.
2.Boil the uncut but peeled potatoes and trimmed fennel bulb in salted water until tender, about 20 minutes. Drain and then return to the pot over very low heat to steam dry for 5 more minutes.
3.Heat the half-and-half and butter in a small pan until the butter has just melted. Add the fava beans to the half-and-half and warm.
4.Mash the potatoes and fennel well with a fork or a ricer and mix in the half-and-half and fava beans. Season with salt and pepper to taste.
