1 lb carrot , peeled and diced
2 ounces carrots , peeled and diced
2 yukon gold potatoes , peeled and diced
1 bunch fresh coriander
1/3 cup unsweetened coconut milk
2 tablespoons olive oil
sea salt , Fleur de sel
crushed red peppercorns

Instructions

1.In a pot, put the diced potatoes, diced carrots and add enough water to cover them
2.Turn on the heat, add salt and bring it to boil
3.Simmer for 10-12 minutes or until the vegetables are soft
4.Save 150 ml of the water and drain the rest
5.In the same pot, put the drained vegetables, coriander leaves, olive oil, coconut milk and the saved water
6.Mash finely with a masher or blend with a mixer to get a smooth texture
7.Add salt and crushed peppercorns, then mix well
8.Serve hot
