Ingredients

2 cups masa harina
1 cup warm water
Pupusas are a traditional dish from El Salvador that have become increasingly popular around the world. They are comfort food at their best - warm, filling, and packed with flavor. Pupusas are made from masa harina, a dough made from corn flour, and often filled with savory ingredients like cheese, beans, meats or vegetables. They are typically served with curtido, a vinegary cabbage slaw, and tomatoey salsa. Variations of pupusas can be made with different fillings, and it's an excellent way to use up leftover vegetables or meats in your fridge.

Instructions

1.In a large mixing bowl, combine the masa harina and water.
2.Knead the dough well until it becomes soft and smooth.
3.Divide the dough into small balls about the size of a golf ball.
4.Flatten each ball and fill with your desired toppings (see variations below).
5.Close the dough around the filling, and flatten again to form a disc.
6.Heat a non-stick griddle or skillet over medium-high heat and cook the pupusas for about 2-3 minutes each side or until lightly browned.
7.Serve hot with curtido salad and salsa on the side.
