Ingredients

4 cloves garlic
2 large fresh green chilies
1 tablespoon grated fresh ginger
1 tablespoon ground cumin
2 tablespoons vegetable oil
1 1/2 kg stewing lamb
2 tablespoons ghee
2 medium onions , sliced
2 bay leaves
4 cloves

1 teaspoon ground coriander
1 teaspoon ground cumin , extra
500 g spinach , chopped
1 can chopped tomatoes
60 ml tomato paste
Punjabi Lamb in Spinach and Tomatoes is a classic Indian dish that originates from the Punjab region, which is known for its bold and flavorful cuisine. The dish is made by cooking tender pieces of lamb in a sauce made from spinach and chopped tomatoes, along with fragrant spices like cumin, cinnamon, and cloves. Instructions

1.Crush garlic, ginger, and green chillies in a mortar and pestle to make a paste.
2.Add cumin and oil to a large pot and heat over medium-high heat.
3.Add the lamb and cook until browned on all sides. Remove from the pot and set aside.
4.In the same pot, add ghee and onions and cook until softened.
5.Add the garlic, ginger, and chili paste, and cook for about 5 minutes.
6.Add the bay leaves, cloves, cinnamon stick, coriander, and extra cumin, and fry for about 2 minutes.
7.Add the spinach and toss to wilt. Then add the canned tomatoes and tomato paste.
8.Add the lamb back to the pot. Cover and simmer for about 1 1/2 to 2 hours or until the lamb is tender.
9.Serve hot with rice or naan bread.
