Ingredients

1 cup raw pumpkin seeds
1 tablespoon cayenne pepper
3 pounds roma ( plum ) tomatoes , halved
2 bunches green onions , cut into 1/2-inch pieces
6 cloves garlic , chopped
1/4 cup olive oil
1 package goat cheese
1 package gemelli pasta
This pumpkin seed pasta recipe is perfect for vegetarians who would like to indulge in a healthy and flavorful meal. Instructions

1.In a small pot, bring salted water to a boil and add pumpkin seeds. Boil them for 10-15 minutes until tender. Drain and set aside.

5.In a large serving bowl, mix the cooked pasta, roasted tomatoes, pumpkin seeds, garlic, and onions. Toss together well and top with crumbled goat cheese.
