Ingredients

1 1/2 lbs sweet Italian sausage
5 -6 cups chicken stock
2 tablespoons butter
1 tablespoon olive oil
1 small yellow onion
2 -3 garlic cloves
1 1/2 cups arborio rice
1 cup portabella mushroom , cut into 1/2 inch dice
1 cup pumpkin puree
seasoning salt ( to taste )
McCormick 's Montreal Brand steak seasoning ( to taste )
1 tablespoon parsley ( chopped fresh or from those wonderful , convenient tubes ... )
3/4 cup parmesan cheese , freshly grated and divided
Pumpkin, Sausage and Portabella Risotto is a warm and filling dish that is perfect for chilly autumn evenings. The creamy rice is studded with diced portabella mushrooms and tender chunks of savory Italian sausage. Instructions

1.In a large skillet, brown the sausage over medium heat, stirring occasionally, until cooked through. Remove from skillet and set aside.
2.In the same skillet, heat the olive oil and butter over medium heat. Add the onion and garlic and cook until soft and fragrant, about 2-3 minutes.
3.Add the arborio rice and stir to coat with the oil and butter. Cook for 1-2 minutes, or until the rice is lightly toasted.
4.Gradually add the chicken stock to the skillet, stirring constantly, until the rice absorbs the liquid and becomes creamy. This should take about 20-30 minutes.
5.Add the diced portabella mushrooms, pumpkin puree, and cooked sausage to the skillet. Season with seasoning salt and McCormick's Montreal Brand steak seasoning to taste.
6.Stir in 1/2 cup of grated Parmesan cheese and the chopped parsley. Serve hot, garnished with the remaining Parmesan cheese.
