Ingredients

2 3/4 cups all-purpose flour
3/4 cup white sugar
1/2 cup brown sugar
1 1/2 teaspoons baking powder
1 pinch salt
1 teaspoon ground cinnamon

2 eggs
1/2 cup pumpkin puree
1 teaspoon vanilla extract
1/4 cup finely chopped pecans

The Pumpkin Pecan Biscotti is a fall-inspired variant of the traditional biscotti. Instructions

1.Preheat the oven to 350℉/180℃.
2.In a large mixing bowl, stir all-purpose flour, white sugar, brown sugar, baking powder, salt, cinnamon, nutmeg and ginger together.
3.Beat the eggs in another bowl and mix in the pumpkin puree and vanilla extract.
4.Combine dry and wet ingredients and fold everything together.
5.Add the chopped pecans to the dough and mix well.
6.Cut the dough in half and make 2 logs of equal size on a parchment lined baking sheet.
7.Flatten out each log with a fork to make it 1/2 inch thick.
8.Bake for 25-30 minutes or until the top is slightly golden.
9.Remove from oven and reduce oven temperature to 325℉/160℃.
10.Wait for the biscotti to cool down and slice each loaf into 1/2 inch pieces (approximately 15 per loaf).
11.Place each slice back onto the baking sheet and bake for an additional 20-25 minutes or until brown and crispy.
12.Let cool and serve.
