Ingredients

2 cups baked butternut squash or 2 cups canned pumpkin
1/2 cup chopped toasted walnuts
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup sugar
30 sheets of defrosted phyllo dough
1/2 cup clarified butter

This recipe uses either baked butternut squash or canned pumpkin along with chopped toasted walnuts to create a unique filling. The filling is then wrapped in layers of phyllo dough and baked until crispy and golden brown. Instructions

1.Preheat the oven to 375°F.
2.In a large bowl, mix together the butternut squash, chopped walnuts, salt, cinnamon, and sugar.
3.Lay a sheet of phyllo dough out on a clean work surface and brush with clarified butter. Lay another sheet of phyllo directly on top and brush with butter again. Continue in this manner, layering phyllo and brushing with butter, until you have used 15 sheets.
4.Spoon the butternut squash mixture into a long log shape along the bottom edge of the phyllo stack. Roll the phyllo up and over the butternut squash mixture, tucking in the sides as you go, until you have a long cylinder.
5.Transfer the strudel to a baking sheet lined with parchment paper. Brush with butter and cut 3 small slits in the top of the phyllo dough to allow steam to escape.
6.Bake for 30-35 minutes, or until golden brown and crispy. Let cool for a few minutes before slicing and serving.
