Ingredients

500 g butternut pumpkin , peeled , deseeded and coarsely grated
1 1/4 cups cottage cheese
3 eggs , lightly beaten
1 brown onion , coarsely grated
4 spring onions or 4 green shallots , trimmed and finely chopped
1 cup whole wheat flour ( Known as wholemeal plain flour in Australia )
salt & pepper , to taste
olive oil flavored cooking spray
30 g baby spinach leaves
60 g low-fat ricotta , fresh
Pumpkin Hash Browns - Vegetarian Pumpkin Burgers are a perfect option for a healthy breakfast or lunch. These patties are a great way to incorporate vegetables and protein into your meal. Instructions

1.Place grated pumpkin in a colander and sprinkle with salt. Let stand for 10 minutes then squeeze out excess moisture.
2.In a large bowl, combine grated pumpkin, cottage cheese, eggs, onion, flour, salt, and pepper. Mix well.
3.Heat a non-stick frying pan over medium heat. Spray with olive oil cooking spray.
4.Form the pumpkin mixture into 8 patties and place in the frying pan. Cook each side for 4-5 minutes or until golden brown.
5.Serve with baby spinach leaves and a dollop of low-fat ricotta on top.
