1 cup crushed gingersnap cookie ( about 20 cookies )
1/3 cup finely chopped pecans
1/4 cup butter , melted
4 packages cream cheese , softened , divided
1 1/2 cups sugar , divided
2 tablespoons cornstarch
2 teaspoons vanilla extract
4 eggs
1 cup canned pumpkin
2 teaspoons ground cinnamon
1 1/2 teaspoons ground nutmeg
chocolate syrup , Marzetti 's Caramel Dip , whipped topping and additional crushed gingersnap cookies ( optional )

Instructions

1.Preheat oven to 350 degrees F.
2.In a small bowl, combine crushed gingersnap cookie, finely chopped pecans and melted butter; press onto the bottom and up the sides of a greased 9-in. springform pan.
3.In a large bowl, beat 3 packages cream cheese until smooth. Gradually beat in 1 cup sugar, then add cornstarch and vanilla. Beat in eggs on low speed just until combined. Stir in pumpkin, cinnamon and nutmeg; pour into crust.
4.Bake for 55-60 minutes or until center is almost set.
5.Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight, covering when completely cooled.
6.Serve with chocolate syrup, Marzetti 's Caramel Dip, whipped topping and additional crushed gingersnap cookies, if desired.
