Ingredients

4 cups pumpkin , peeled diced into 1/2 inch cubes
2 tablespoons olive oil
200 g feta , crumbled
1/4 cup extra olive oil
1 tablespoon finely chopped fresh sage
1 long french breadstick
cooking spray
100 g walnuts , toasted , finely chopped
salt and pepper
extra fresh sage leaf ( to garnish )

Instructions

1.Preheat oven to 220°C / 425°F.
2.Toss the diced pumpkin with 2 tablespoons of olive oil, salt, and pepper.
3.Place pumpkin on foil-lined baking tray and bake for 20-25 minutes.
4.Mix the feta, extra olive oil, and sage in a bowl. Leave aside.
5.Slice the breadstick diagonally into 1-2 cm slices.
6.Spray the bread slices with cooking spray and toast in preheated oven for 5-6 minutes.
7.Assemble the bites with the pumpkin and feta mixture on top of the bread slices and sprinkle with toasted walnuts and sage leaves.
8.Serve immediately.
