Ingredients

1 tablespoon olive oil
500 g pumpkin , peeled , cut into 1 . 5cm cubes
1/2 cup reduced-fat cheese , grated
1/4 cup chives , finely chopped
4 eggs
1/2 1/2 cup low-fat milk or 1/2 cup soymilk
2 tablespoons pepitas
wild rocket , to serve

Instructions

1.Preheat the oven to 180°C or 350°F.

5.Add the cooked pumpkin, chives, and grated cheese to the mixing bowl and stir until everything is evenly mixed.
6.Divide the mixture evenly between 4 cups of a muffin tin.
7.Sprinkle the tops of the frittatas with the pepitas.
8.Bake for 20-25 minutes until the frittatas are cooked through and the tops are golden brown.
9.Serve with a side of wild rocket.
