Ingredients

2 1/4 teaspoons active dry yeast

2 cups whole milk , scalded and cooled to lukewarm temperature
1 cup sugar
1 teaspoon salt
7 -8 whole cardamom pods , seeded and crushed ( about 1 tsp )
4 eggs , beaten
8 -9 cups sifted white flour
1/2 cup butter , melted
1/2 cup cinnamon
1 egg
1/2 cup ground almonds
demerara sugar

Pulla buns are made from a sweet and buttery dough, rolled into braids and topped with cinnamon, sugar, and almonds. Instructions

1.In a large bowl, dissolve the yeast in warm water and let sit for 5 minutes.
2.Add the scalded whole milk, sugar, salt, crushed cardamom seeds, beaten eggs, and sifted flour to the yeast mixture. Mix well.
3.Knead the dough for about 10 minutes until it's smooth. Cover the dough and let it rise in a warm place for about 45 minutes.
4.Punch down the dough and roll it into 12 inch lengths. Twist them into various braid shapes according to preference, and place the braids on a baking sheet.
5.Mix melted butter with cinnamon and brush over the braids. Brush the beaten egg over the braids.
6.Sprinkle ground almonds and Demerara sugar on top of the braids. Let the braids rise for 20 minutes.
7.Preheat the oven to 400°F and bake the braids for 12-15 minutes until golden brown.
