1/4 teaspoon salt
2 2/3 cups warmed flour
4 -5 egg yolks , well beaten
6 -8 tablespoons lukewarm milk
1/2 cup butter , melted

Instructions

1.In a large bowl, crumble the yeast cake into the warm milk and allow it to dissolve.
2.Gradually add in 1 and 1/3 cups of flour, mixing until the mixture is smooth.
3.Add the softened butter, powdered sugar, grated lemon rind, mace or nutmeg, and salt. Mix well.
4.Gradually add the warmed flour, eggs yolks, and milk, stirring until the dough is soft and elastic.
5.Turn the dough onto floured surface and knead until the dough is smooth and satiny.
6.Cover and allow it to rise until double in bulk.
7.Roll the dough to 1/4 thickness, and cut into rounds.
8.Place the doughnuts on greased baking sheets and let them rise in a warm place until double in bulk.
9.Fry the doughnuts in hot fat until they are golden brown. Drain on absorbent paper and sprinkle with powdered sugar.
