Ingredients

1 cup water
2 tablespoons extra virgin olive oil
2 teaspoons white wine vinegar or 2 teaspoons lemon juice
2 teaspoons sugar
1 1/2 cups bread flour
1 1/2 cups white whole wheat flour ( not regular white flour -- this is a whole grain wheat flour )
2 teaspoons active dry yeast
2 teaspoons vital wheat gluten
1/8 teaspoon baking powder
1 1/2 teaspoons salt

Instructions

1.In a large mixing bowl, add water, white wine vinegar or lime juice, sugar and extra virgin olive oil.
2.In a separate mixing bowl, add bread flour, white whole wheat flour, active dry yeast, vital wheat gluten, baking powder and salt.
3.Add dry mixture to wet mixture and stir until well combined.
4.Knead the dough for about 10 minutes until it's elastic and smooth.
5.Put the dough in a lightly oiled bowl, cover with a damp cloth and allow it to rise for an hour.
6.Preheat the oven to 475°F.
7.Lightly oil a baking sheet or a pizza stone.
8.Roll the dough into 8 to 10 circles.
9.Transfer the pita bread onto the baking sheet or pizza stone.
10.Bake for 5-7 minutes.
